Texas Caviar
This is my kind of dip. I have a very wimpy palate, meaning it can't take the heat. So when I tasted this genius concoction years ago, I knew I found a friend for life!
1 10 oz frozen corn, thawed
1 15 oz can black-eyed peas, drained
1 15 oz can black beans, drained, rinsed
2 green peppers, seeded and chopped small
5 - 8 roma tomatoes diced small or 1 can diced tomatoes, drained
1 small red onion, chopped
1 cup cilantro, chopped small (I always add more)
1 cup Italian dressing (I love Wishbone)
1/2 tsp garlic salt
Juice from 1 lime (2 small)
Mix all together in a large bowl and refrigerate until ready to use.
